I've had several requests for chicken salad. Today I made some after having cooked too much chicken for another recipe. This is one dish that can be fixed to your preference. Today mine was very simple. It's great when I add pineapple, apples, and pecans. However, it was very tasty with just what I had on hand. I hope you will try this by using the ingredients that you like. It's good to eat with crackers, on a croissant, pita, or plain bread. Also, look at the tab FAVORITE PRODUCTS because the 8 cup Pyrex mixing bowl that I use is finally available to purchase on Amazon. It's one my most requested items that I use.
3-4 chicken breasts (I boiled mine)
green seedless grapes, sliced in half (about 1 cup)
red seedless grapes, sliced in half (about 1 cup)
1/2 cup celery, chopped
Lawry's Seasoning to taste (I used about 1 tsp)
1-2 cups mayonnaise (Start with 1 cup and add more as needed)
Cook chicken breast in water until done. Chop or shred.
Add grapes, celery, Lawry's seasoning and mayonnaise.
Mix well. Refrigerate
This recipe is on page 10 in my cookbook.
