A sweet friend of mine who was from Texas, Karen Flores, made the most delicious Mexican food. She moved back to Texas but shared her recipe for Mexican rice before she left. Harold thinks her Mexican rice is better than any he has ever had. He requested that I make it this week and I knew that I would share the recipe with you. It isn't hard to make and if you double this recipe you can feed a crowd. It's another easy dish to make so I hope you will try it.

I used vegetable oil. That's what I have on hand. Canola should work just as good.
