A sweet friend of mine who was from Texas, Karen Flores, made the most delicious Mexican food. She moved back to Texas but shared her recipe for Mexican rice before she left. Harold thinks her Mexican rice is better than any he has ever had. He requested that I make it this week and I knew that I would share the recipe with you.
