This is a casserole that you will want to put on a rotation for meals. Kids love it too. This really makes a big dish and when you add sour cream, pico, and guacamole it takes it up to another level. We like it with tortilla chips.
I use hominy instead of corn. Delicious way to change it up a bit.
I had a batch of Spanish Rice already made, so I used that. Great recipe! Will use white rice next time.
This is so good and so easy! It's just the two of us, so I used two smaller pans (from Dollar Tree )and froze one. Freezes well, tastes just as good as fresh!
Where is the recipe?
Made this the other night for supper. It was awesome!!! This recipe is a keeper.
