GRANNY CAKE

Sometimes you can tell by the name of a recipe that it's going to be good. When my son-in-law told me about a "GRANNY CAKE" I knew that I had to make it. I think anything our grandmothers made was good. This cake is simple. Ingredients are those you probably have and it is so delicious and moist. The picture above is after it was cut, but the one below is the cake before it was cut. I hope you will try it.

INGREDIENTS
1 1/2 cups white sugar
2 cups all purpose flour
1 tsp. baking soda
1/2 tsp. salt
2 large eggs
1 (20 oz.) can of crushed pineapples, undrained
1 cup of brown sugar (for topping
1 cup chopped pecans (for topping
ICING
1 cup evaporated milk
1/2 cup white sugar
1 stick butter
1 tsp. vanilla
Preheat the oven to 350 degrees and spray a 9 x 13 inch baking dish.
In a large bowl combine white sugar, flour, baking soda, and salt. Whisk.
Add eggs, crushed pineapples with juice and mix until smooth.
Pour batter into the baking dish.
Sprinkle the dough with chopped pecans and top with brown sugar.
Bake for 40-45 minutes, or until a toothpick comes out clean.
For the icing, mix the evaporated milk, white sugar, and butter in a saucepan over medium heat and bring to a boil.
Pour it over the cake that has just come out of oven. You can poke holes to let the icing soak into the cake.
Cool completely before cutting.
