Some people tell me that making a carrot cake seems very hard. Sure there are a lot of steps, but it's not that hard. The end result is worth any effort! It's so delicious! This recipe is from Miss Annie's Home + Kitchen's Volume 1 cookbook. It's the only recipe I use these days.

Would substituting coconut oil or melted butter in place of the vegetable oil work? We have to avoid seed oils due to joint issues because seed oils are very inflammatory.
