If you have never tried an October bean, I invite you to do so. You plant them either in early Spring or late summer so you can enjoy them at the end of your garden. October beans have the prettiest little speckled shells, and when you cook them low and slow, they turn so tender and creamy.
Normally, I always make meatloaf balls , but today we wanted something a little different. Meatloaf is a staple in many households, and we sure do love it around here. One of the advantages of making it into a loaf instead of balls is the leftovers—because sliced meatloaf makes the best sandwiches the next day. This recipe can be found in my Volume 1 cookbook .
