Making a quick summertime treat doesn't have to be hard. These mini lemon cupcakes are wonderful! The glaze is what sends these over the top!

My mother used to make these but used orange instead of lemon. She would pipe a little icing flower/leaves to the top. They were called orange blossoms. She would make them for special occasions, like baby/wedding showers.
