A friend from church gave me this recipe several years ago. It is still my go-to recipe for making Pimento Cheese. It's quick and easy and so good! We even eat it for a snack sometimes. I hope you'll try it! This recipe can be found on page 4 of my Volume 1 cookbook.

We love pimento sandwiches. We make them for our trip to beach. They’re so good and better than hamburgers that you find along interstate.
