From my Volume 4 cookbook, Simply Salads, this Spicy Southwest Chicken Salad is easy and delicious. I cooked my chicken in the crockpot throughout the day so that I could assemble the salad quickly for dinner. You can just as easily use a rotisserie chicken that you buy at the store. I hope you will try it.

My mother always made this salad for holidays. It's simple and very good. I added an extra can of fruit to make this recipe go a little further. The original recipe can be found in my Volume 1 cookbook.
