I needed to present a small charcuterie board for an intimate brunch for our county mayor. I was a bit intimidated because she used to own and operate a local restaurant that served lunch to our community. One of the items I included on the board was Mama Sue’s pimento cheese. It was a success!! The mayor herself told me it reminded her of their pimento cheese she used to serve in her restaurant where they added cayenne pepper. She inquired if it included cayenne and was surprised to learn the little kick was the pepper jack cheese. I said a little “Thank You” to Mama Sue in my mind with the compliment.
