I love a good simple recipe, and this Pineapple Coleslaw from the Simply Six cookbook sure does hit the spot! It’s cool, crunchy, just a little sweet, and so easy to throw together.

I know coleslaw is already a cookout favorite, but adding pineapple gives it such a fun little twist. That sweetness mixed with the tangy dressing is just so good! This is the kind of dish that goes perfectly beside BBQ, fried chicken, hamburgers, or just about anything coming off the grill.
