When I saw Caroline, the Mississippi Kween, make this recipe a few weeks ago, I had to try it! I love using my crockpot when it's hot outside. Not only does it make dinner time easier, it doesn't heat up my house!

Using a crockpot for dinner helps me so much on busy canning days. Y'all know that I love Mexican and I love this dish! It's very versatile. You can serve it over chips, put it in a tortilla or just eat it with some Mexican rice. It's not very spicy either.
