We didn't want a big dinner the other night so egg salad was perfect for our supper. Harold and I both have fond memories of his mother fixing us an egg salad sandwich on Sunday evenings after church. This recipe can be found in my Volume 4 cookbook.

Aside from my Strawberry Cake, this recipe is my most requested meal. We have it frequently and if I need to take a meal to a family in need, this is the recipe I use. Everyone always loves it. You can find this recipe in my Volume 1 cookbook.

When it is very hot outside, I don't want a cole slaw that is mayonnaise based. This marinated cole slaw uses vinegar and it is so good! It lasts about a week in the fridge so I tend to make a large portion and we just eat on it throughout the week. The recipe can be found in my Volume 1 and Volume 4 cookbooks.
